A cruciferous vegetable, almost identical to the white or pale green varieties as far as features are concerned. Red cabbage differs only in that the leaves are more compact and in colour, the latter due to the anthocyanins produced by plant’s own metabolism.
It has few calories, good vitamin content, especially vitamin A, B, B1, B5, B6, and above all C. Moreover, it is rich in minerals like phosphorus, potassium, selenium, calcium, and iron, as well as acetylcholine a substance able to regulate intestinal peristalsis.
Red cabbage is generally mild in flavour and is a tasty partner for apples, pears, and onions. It can be eaten raw in salads, and can be cooked in different ways.
