Directions

Thinly slice the red cabbage and leave to soak in cold water. Peel and julienne the carrot. Peel and dice the apple. Peel the orange and remove the pith from the segments. Keep any juice that escapes during this operation.
Place all the ingredients into a bowl. Prepare an emulsion by mixing the orange juice with a few tablespoons of oil and salt and use to dress the salad.
