
Directions
Boil the broccoli in boiling salted water; drain when al dente and cut into pieces. In a large skillet, fry the pestled fatback in oil with the onion and garlic. Add the broccoli and leave to flavour. Now add the cubed tomatoes, salt and pepper, and continue cooking.
A minute before removing from the heat, sprinkle with vinegar, then serve.
