Directions

Sauté the onion, beet greens and tomatoes in oil, using a large skillet. Add the beans, then the diced potatoes, season with salt, pour in a little water and cook until ready.

Serve piping hot as a side dish.

  • 500 g of clean, coarsely-chopped beet greens
  • 200 g boiled, drained borlotti beans
  • 2 sliced onions
  • 2 chopped plum tomatoes
  • 2 diced potatoes
