
Directions
Select fresh figs preferring ripe fruit only, wash thoroughly and peel. In a large bowl, blend the softened butter with the sugar using an electric mixer. Ensure the mixture is blended well. Add the eggs and milk to the butter and sugar, and continue blending. Little by little add the flour and the baking powder, add a pinch of salt and continue to work until it is well blended and fluffy. Line a baking ring with parchment paper, or use a silicone mould, and pour in the mixture, levelling off by gently tapping the container on the countertop. Place plenty of fresh figs on the surface of the cake and let them sink into the mixture.
Place in a preheated oven at 180 °C for about 30 minutes then test for doneness with a toothpick. Leave to cool, unmould and dust with icing sugar. Serve the fluffy cake with slices of fresh figs, and to make it even more delicious, drizzle with limoncello.

Fluffy Cake with Fresh Figs
