A member of the brassica family, savoy cabbage differs from cauliflower as it does not have florets but a round head of green, bullous or smooth leaves. It is available all year round but is consumed mainly in winter.
Savoy cabbage contains vitamin A, essential for good eyesight and keeping skin healthy; vitamin C, important for the immune system; vitamin K, which is an excellent blood clotting aid. In addition, this cabbage is rich in minerals such as potassium, iron, phosphorus, calcium, and sulphur (to which it owes the distinctive aroma perceived during cooking), indispensable for cell and tissue regeneration and skin hydration.
Savoy cabbage is a great ally against high blood pressure thanks to the presence of glutamic acid, an amino acid that is proven to contribute significantly to lowering blood pressure. To be sure of getting all the benefits offered by Savoy cabbage and other cruciferous vegetables, it is a good idea to eat generous portions two or three times a week.
